One of the most celebrated seasonal vegetables is the pumpkin which is a type of winter squash. When consumed fresh, it offers an abundance of vitamin A, vitamin C, lutein, potassium, antioxidants, and fiber.

FRESH PUMPKIN HUMMUS
Ingredients:
2 C. Fresh Pumpkin (sliced)
2 1/2 C. Sprouted Chick Peas
3 oz Sesame Oil
4-5 oz Olive Oil
4 oz Lemon Juice
1 tsp Kelp Powder
Pinch of Cayenne
3/4 T. Cumin
Pinch of Frontier Pizza Seasoning
2 tsp. Pumpkin Pie Spice
1 T. Cinnamon
2 Drops of Stevia
1 T. Coconut Aminos
1 tsp of Braggs Liquid Aminos
Instructions:
1. Combine all ingredients in a blender and mix until desired consistency.
2. Serve with Carrots, Celery, and Cucumber sticks.
